SPICY CHICKPEA CHICKEN SALAD

Here’s a high Protein, high fiber and filling spin on a traditional dish! Serve it over salad, in a wrap, as a dip, or just as is!
Ingredients:
2-3 lbs chicken breast, cooked finely chopped (or 2 shredded rotissiere chickens to save time)
1/2 cup of nonfat greek yogurt
3-5 Tbsp hot sauce depending on spice preference
1 small bunch of fresh parsley or dill minced
1 tsp chili powder
Salt & Pepper to taste
1 Can chickpeas, drained, and rinsed
1 cup chopped celery, finely chopped
3-4 green onions, chopped
chopped/sliced almonds optional
Directions:
Shred/chop chicken place on the side.
In a large bowl add greek yogurt, hot sauce, chili powder, garlic powder, and salt & pepper.
Add chicken, chickpeas, celery, green onion and mix well.
Add more hot sauce when serving if desired.
Optional toppings: crushed red pepper flakes, sunflower seeds, pepitas, or sliced almonds.
