Here’s a high Protein, high fiber and filling spin on a traditional dish! Serve it over salad, in a wrap, as a dip, or just as is!

Ingredients:

  • 2-3 lbs chicken breast, cooked finely chopped (or 2 shredded rotissiere chickens to save time)
  • 1/2 cup of nonfat greek yogurt
  • 3-5 Tbsp hot sauce depending on spice preference
  • 1 small bunch of fresh parsley or dill minced
  • 1 tsp chili powder
  • Salt & Pepper to taste
  • 1 Can chickpeas, drained, and rinsed
  • 1 cup chopped celery, finely chopped
  • 3-4 green onions, chopped
  • chopped/sliced almonds optional

Directions:

  1. Shred/chop chicken place on the side.
  2. In a large bowl add greek yogurt, hot sauce, chili powder, garlic powder, and salt & pepper.
  3. Add chicken, chickpeas, celery, green onion and mix well.
  4. Add more hot sauce when serving if desired.
  5. Optional toppings: crushed red pepper flakes, sunflower seeds, pepitas, or sliced almonds. Eat as is or have or veggies in a wrap or as a dip. Enjoy!
